Seriously this right here is the story of my life. I LOVE salsa. And I love my mom's black-eyed pea salsa. I was a picky eater as a child and I used to hate corn and avocado (weird, right?) but I would always eat this salsa like crazy. It's that good.
The ingredients: black-eyed peas, black beans, tomatoes, avocados, corn, onion, cilantro, and Italian dressing. And of course, anything else you can think of that would add to the deliciousness.
Chop up all of your veggies and mix them in with your beans. Then, mix in the Italian dressing. I usually use about half a bottle or so. I would add sparingly until you get the amount that seems right to you. After you've mixed everything in and let it chill for a few minutes in the fridge enjoy! Eat it all in one sitting or add a little lime juice to keep it fresher, longer. It usually never lasts me more than a day but that might be because I don't have the willpower to stop eating this stuff.
But who can blame me?
Black-Eyed Pea Salsa
1 can black-eyed peas, drained
1 can black beans, drained
1 cup chopped cilantro
1 medium purple onion
3-4 large tomatoes
2 avocados
8 oz. Italian dressing
1 bag frozen corn
1. Cut up all the vegetables and mix together with beans. Add Italian dressing slowly while mixing. Serve with chips.
